Banana Bread

Who can resist banana bread? This mix forms a slightly crunchy outside and a soft, tender inside.

White rice flour, tapioca flour, sugar, baking soda, salt.

Ingredients to add:
½ c. butter or milk-free margarine, softened
¼ c. milk or non-dairy milk substitute
2 eggs or egg substitute
1 c. ripe banana, mashed (2 bananas)
2 tsp. vanilla extract

Directions:
• Preheat oven to 350 degrees.
• Add wet ingredients to dry mix and stir until moistened.
• Pour into loaf pan greased on the bottom only.
• Bake for 50-60 minutes or until completely set. Let cool in the pan 10 minutes before turning onto rack. Cool completely before slicing.

These can also be made into banana muffins. Just follow the directions, use a lightly greased muffin tin instead of a loaf pan, (WARNING: Don't use muffin papers), and cut the baking time in half. Remove from oven and immediately turn out onto a cooling rack.
